PROFESSIONAL PATHWAYS
IN DEVELOPMENT
01 / Available nowCost & price a menu
The Batch & Costing Calculator scales any recipe to a batch and returns a true cost per serving plus a suggested price at your pour-cost target, in your own currency. The Cocktail Menu Builder then reads the whole list at once — price ladder, spirit-family balance, and a Star/Plowhorse/Puzzle/Dog classification using the published Kasavana & Smith method rather than a guess.
In The Lab02 / Available nowControl prep and waste
Batch prep is where margin quietly disappears. The Shelf Life & Storage Calculator gives an estimated window and a real use-by date for infusions, syrups, shrubs and cordials, using published food-safety thresholds — including the ~25% ABV point at which ethanol reliably inhibits microbial growth, so a high-proof infusion is not treated like a fresh cordial.
In The Lab03 / Available nowStandardise a spec
A spec that lives in one bartender's head is not a spec. The Infusion, Dilution & ABV and Acid Adjustment calculators turn "about a handful, until it tastes right" into a ratio anyone on the team can reproduce at any batch size.
In The Lab04 / In developmentTeam workshops
Live sessions built around a real bar, brief, or menu question — sensory vocabulary, development process, and how to guide a team through a flavour decision without defaulting to the loudest opinion in the room. Not yet scheduled; register interest and we will write when dates exist.
By inquiry05 / In developmentCredentials
A practice-based pathway for professionals who want to go deeper than a weekend certificate. Deliberately unhurried — we would rather publish something defensible late than something thin on time.
In development06 / Always openAsk a question
If you are working on something specific — a menu that will not cost out, a batch that keeps separating, a non-alcoholic list that reads as an afterthought — write and describe it. Replies come from the bench, not from a support queue.
